This Rui HSS Kiritsuke is a high performance knife that has remarkable edge retention. The 20/80 bevel design means that food will fall aside when you cut. 

HSS is not a stainless steel, therefor, you need to wipe it completely dry after use and store in dry place to prevent rust. However, just like any traditional Japanese high carbon steel knife, you can easily get the rust off by using a sandpaper.
